Ahhhhh! Korean Ramen, is one of the hottest Asian dishes. It has everything your palette craves, it has fresh herbs to give liveliness, meat for your more naughty desires, caramelised onions for the sweetness, and the classic half-cooked egg for the nirvana-like syrup that is the yolk.
I do have a confession though, when I say authentic, I don't mean I made the ramen from scratch, cause that would take too long and I really don't have that much time!! so it's more like I cooked ramen that came in a packet but all the toppings so to speak are made by me at home.
Great now let's Start with the recipe on how to make this lovely treat!
First, chop up some onions in a ring-like manner and make sure they are no thicker than 0.5 cm (I mean approximately don't actually use a scale to measure) as that way they can actually caramelise properly.
Then finely chop some coriander leaves, this is optional I just feel like it gives some extra colour and gives a little bit of freshness to the dish.
Get some chicken that has been marinated with your favorite spices for this dish however, I used a marination consisting of some yogurt, salt, pepper, chilli powder, vegetable oil, sesame seeds, chicken tandoori powder, turmeric, and garam masala.
I prefer to pan-fry my chicken as it's faster and doesn't dilute the flavour, but you can always smoke it or grill it if you want that nice smoky flavour added as well.
Now is when you cut open the packet and get your ramen ready.
Now for the egg, the way I cook my egg is a little different from how others do it, but I like my way as it doesn't end with the white turning into rubber and yet manages to stay crispy on the border. I heat the pan on high flame for 2 minutes, then add some neutral oil and butter ( can be salted or unsalted) that way we can make the egg crispy as well as give it some sweetness with the butter. When the butter starts to turn brown, cut off the heat and gently crack your eggs, making sure you don't break the yolk as we want it runny. After you see the border crisp up put the heat back on but on sim (the lowest setting). Once the yolk is cooked to how u like it put it on the ramen, and plate the rest of your toppings. Voila!! Your dish is ready to be served!!
SIDE NOTE: You can use fried Mushrooms dipped in soy sauce as a topping as well instead of the onion as they both offer some sweetness to the dish.
